Most poultry is cooled in shared tanks of chlorinated water, absorbing what it sits in. Ours never touches water — local Ontario chicken, air-chilled and sourced through The Butcher Shoppe, purveyors of fine meats in Toronto since 1984. Firmer texture. A proper sear. Nothing added, nothing diluted.
